Adam Chrząstowski - the chef and the co-founder of Ancora Restaurant. A philosopher by education, he dedicated his career to favours, aromas and wine at a young age.
He began his cooking adventure, which continues until the present day, in Switzerland where he learnt the basics of his trade. He honed his skills in Poland, cooking together with Kurt Scheller at the prestigious Hotel Bristol restaurant. His outstanding skill of blending original flavours was recognised very quickly and he was offered jobs in the US and China. Keen to explore new flavours and culinary traditions, he chose the Middle Kingdom and worked as the chef at two Shanghai –based restaurants for two years. This experience enabled him to create his unique, signature cooking style famed for unconventional fusion of flavours and aromas.
With his strong and bold personality, Adam Chrząstowski is keen to experiment and every dish he creates rediscovers the Polish cuisine anew. Currently, our Chef is fulfilling his dream – he is cooking at his own place and indulging guests of Acora Restaurant in Kraków.
In 2011, Adam Chrząstowski was appointed the “substantial patron of culinary activities during the Polish European Union Presidency”. This nomination consolidates his position as one of the best chefs in Poland.
